Two nice Porterhouse steaks got a healthy dose of Plowboys Bovine Bold and were set aside.
Two Portabellas, with gills and stems removed, stuffed with roasted red peppers and topped with mozzarella cheese.
Two sweet onions sliced thin, dredged in all purpose flour and seasoned heavily with Tony C’s.
I fried the onions in canola oil on the grill in a cast iron skillet.
I seared the steaks over some really hot coals, then moved them off, added some soaked oak chips and closed the top to finish the cooking and add some smokey flavor.
